Tofu Shawarma with Roasted Veggies & Tzatziki

I love to explore new flavors, and the first time I had shawarma I about died. It was SO delicious! So I set out to make a version that incorporates tofu instead of chicken. Make sure you dry it well with paper towels or a press, and get some good crispy edges on it before you add the sauce. I usually serve this recipe with homemade naan, which I will include as soon as I get a quiet moment to get it put together. For now, I’m sure you can google or use your most favorite naan recipe – or just buy it at the store!
